Description
The most tender and delicious fish belongs to the sturgeon family. When baked, the fish acquires a delicate flavor, and lemon, mint, and a little white wine perfectly complement the dish.

1. First, rinse the sturgeon under cold water and dry it with a paper towel.

2. Rub the fish with salt and let it sit for a few minutes (10-15). Then rinse under cold water and dry again.

3. Now you need to thoroughly rub the sturgeon with vegetable oil and a spice mixture. Let it sit for a few minutes (7-10) so it can absorb the flavors.

4. Meanwhile, preheat the oven to 180 degrees.

5. Take the lemons, cut them into small pieces. Add the chopped mint. Mix well.

6. Now you need to place the mixture of lemons and mint inside the fish's belly and carefully sew it up. Then add a glass of your favorite white wine to the baking tray. Cover with foil.

7. Place in the oven for 30 minutes. Then, open the foil and increase the temperature to 250 degrees. Pour over the juice. Keep the fish in the oven for another 10 minutes to form a crispy crust.
