
Ossetian pie in the oven
Description
Homemade baked goods for tea. For lovers of Caucasian cuisine and baking – a delicious Ossetian pie baked in the oven. First, prepare a yeast dough. When it has risen well, divide it into portions and roll each into flat pancakes. Place a filling of grated cheese, sour cream, yogurt, herbs, and greens on each. Gather the edges of the dough around the filling, forming a pouch, and seal the edges. Then flatten the pie into a round, flat shape and bake in the oven for about 30 minutes. Brush the top of each pie with butter, stack them in a pile, and serve. Serve cooled or slightly warm.

Dissolve the yeast in warm milk, let it sit for a while, then mix it with flour, softened margarine, salt, and sugar. Knead the dough and let it rise for 1 hour. Grate the cheeses, add sour cream, yogurt, chopped herbs and greens, as well as salt and pepper to taste. Mix well.

Divide the risen dough into 3-4 parts, roll out into circles, and distribute the filling over them. Gather the edges of the dough around the filling like a pouch and seal the edges.

Line a baking sheet with parchment paper, place the dough balls seam-side down on it, and gently flatten them with your palm into a flat shape. Poke small holes on top to allow steam to escape, then brush with kefir.

Preheat the oven to 200 degrees and bake the pies for half an hour. Then brush the top of each pie with butter, stack them in a pile, and serve.
