
Ossetian cheese and herb pie
Description
Delicious baked treat for the whole family. This Ossetian pie with such filling turns out very light and does not affect your figure at all. Be sure to make and try it. Prepare the yeast dough—I usually do this in a bread machine. While the machine is running, mash the cottage cheese with an egg, add grated cheeses, pepper, and chopped herbs. Mix well. Divide the ready dough into portions, roll them into flatbreads, and spread the filling over them. Gather the edges of the dough at the top, then flatten the resulting ball into a patty. Make a small hole in the top to let steam escape, and bake in the oven for 20 minutes. Brush the hot pie with butter and serve.

I usually prepare the dough in a bread machine—it's convenient, just load all the ingredients, turn on the program, and wait. However, you can do without it—dissolve the yeast in warm milk with sugar and salt, add flour, vegetable oil, and knead the dough. Let it rise in a warm place for 1.5 hours until well risen.

Mix the cottage cheese with the egg, add the grated cheeses, pepper, and chopped herbs. Mix well.

Divide the dough into portions and roll them out into flatbreads. The number of flatbreads should be odd – this is the tradition for preparing Ossetian pies. An even number is made only for funerals.

Place a portion of the filling onto each flatbread, gather the edges of the dough up around the filling to form a ball, sealing the edges at the top. Gently flatten each ball into a flat pie using your palm. Make a small hole in the center of each pie to allow steam to escape, then bake in a preheated oven at 200°C (392°F) for 20 minutes. Brush the hot pies with butter and serve immediately.
