
Ossetian pie with onions
Description
The recipe won’t take much time. Ossetian pies are incredibly delicious, and you can come up with different fillings! If the pie turns out thicker than 1.5 cm, then it is no longer Ossetian, but just a pie. And the dough from this recipe can be divided into two or three pies; it all depends on the desired size. In addition to onion, I suggest adding cheese to the filling, but you can also try options with egg, potatoes, etc. The baked goods are very tasty, I recommend trying them. The baked goods are ready. Serve to the table.

Prepare all the ingredients.

Combine warm milk, sugar, and yeast. Stir and let sit for 10 minutes.

In a deep bowl, combine kefir, sour cream, egg, and salt.

Mix and add the risen sponge.

Mix everything again and gradually add the flour in portions.

Knead a soft dough that doesn’t stick to your hands. Shape it into a ball, grease it with vegetable oil, cover it, and leave it to rise for about an hour in a warm place.

Meanwhile, prepare the filling. Finely chop the onion and sauté it in butter until soft.

Add grated cheese to the onion (I used homemade goat cheese and simply crumbled it by hand), salt if needed, and ground pepper to taste.

Mix everything well. The filling is ready.

The risen dough should double in size.

Divide the dough into 2–3 parts and shape each one into a flatbread.

Place the filling in the center.

Bring the edges together toward the center and tie them in a knot.

Then turn it over and use your palms to shape it into a round flatbread. Make a hole in the middle so the dough doesn’t puff up, transfer it to a baking sheet lined with parchment paper (I also additionally sprinkle the paper with flour). Bake each pie one by one in a well-preheated 250°C oven, first for 10 minutes on the very lowest level, then move the pie to the middle rack and let it brown for about another 10–12 minutes.

Take out the pie, brush it generously with butter, and cover it with a clean towel. Place the next pie on top of the previous one and brush it with butter.
