
Ossetian pie with beet leaves
Description
Perfectly pairs with tea and coffee. Beet greens are a traditional filling for Ossetian pie. To prepare it, first make a yeast dough and let it rise properly. Rinse the beet greens and finely chop them. Divide the risen dough into three parts and roll each part into a flat round. Place some of the filling in the center of each round and add a pinch of salt. Pinch the edges of the dough together over the filling, forming a ball, then flatten it into a pie and bake in the oven for 20 minutes. Once removed from the oven, brush the hot pie with butter and serve. Serve warm or cooled. Ideal with tea.

Dissolve the yeast in warm water with sugar. After a while, add salt, sugar, oil, and flour. Knead the dough and let it rise well. Wash the beet leaves and finely chop them.

Divide the dough into three parts and roll them out into flatbreads. Place a portion of the filling in the center of each flatbread—the amount of filling should be roughly equal to the amount of dough. Slightly salt the filling.

Pinch the edges of the flatbread around the filling to form a ball.

Grease the frying pan with margarine, place the ball of dough seam-side down and flatten it into a pancake, spreading it to the edges of the pan. Be careful not to tear the dough. Make a small hole in the center to let the air escape. Preheat the oven to 200°C and bake the pie for 20 minutes. When removed from the oven, brush the hot pie with butter. Serve warm or cooled.
