
Ossetian pie with lemon
Description
The recipe will not take much time. An Ossetian pie is considered successful when its thickness does not exceed 2 cm. Therefore, the baking diameter should be about 30–40 cm. You can adjust the sweetness of the filling to your taste, but do not overdo the sugar, or the filling will start spilling out through the cuts and spoil the pie’s appearance.

Prepare the necessary ingredients.

Dissolve the yeast in warm milk.

In a bowl, combine soft margarine, sugar, and salt.

Stir with a spoon until smooth and homogeneous.

Add milk with yeast. Stir.

Add 2/3 of the specified flour.

Start mixing with a spoon, sprinkling in the remaining flour. As soon as it becomes difficult to mix with a spoon, knead by hand.

The finished dough should be soft, pliable, and not stick to your hands. Cover the dough with a towel and leave it in a warm place for 1 hour to rise.

While the dough rises, make the filling. Pour boiling water over the lemons and cut them into small pieces. Transfer them to a blender jug. Blend the lemons until smooth.

Transfer the lemon mixture into a bowl and add sugar. Stir, then refrigerate.

When the rising time is up, punch down the dough. Divide into 2 equal parts.

Roll each piece into a sheet 30 cm in diameter.

Take a round pan or skillet. Place one layer in it. Spread the lemon filling on top. Level it.

Cover the filling with the second layer. Tuck the edges under the bottom layer. Press the edges with your hands so the surface is even. Make several cuts in the center of the pie. Bake in an oven preheated to 180 degrees for 25–30 minutes. Allow for your oven’s quirks!

When the time is up, take the pie out of the oven. Transfer it to a serving dish and let it cool.
