
Ossetian pie with chicken and cheese
Description
The pastry is simple and quick to prepare. This is an easy and delicious pie to bake in the oven. First, prepare the yeast dough. While it's rising, you can make the filling. The filling is very easy to prepare—simply mix ground chicken, grated cheese, chopped onion and garlic, and salt to taste. When the dough has risen, divide it into portions and roll each portion into a flat round. Divide the filling and place it onto the rounds. Gather the edges of the dough around the filling and pinch them together. Flatten the resulting dough ball with your palm and place it in the oven to bake for 25 minutes. Once baked, transfer the hot pie onto a serving plate, brush the top with butter, and serve.

Prepare the starter – dissolve the yeast and sugar in warm water and let it stand for about 10 minutes. Sift the flour into a bowl and add a pinch of salt.

When a foam appears on the starter, pour it into the flour in a thin stream and knead the dough. After kneading well, place it in a greased bowl and let it rise for one to one and a half hours.

Meanwhile, prepare the filling – mix chicken mince, grated cheese, chopped onion and garlic, and salt to taste in a bowl.

Knead the risen dough and let it rest for another half hour. Then divide it into 3 parts. Roll out each part into a flat round. Divide the filling into equal portions and place onto the rounds. Now gather the edges of the dough around the filling, sealing the edges well. Grease a baking pan and place the dough ball into it. Now comes the most crucial step—gently press it out by hand into a flat round, being careful not to tear the dough. Try to make the pie as thin as possible. Then make a small hole in the center and place it in the oven. Bake for 25 minutes at 200°C. Transfer the hot pie onto a serving dish, brush the top with butter, and serve.
