
Ossetian pie with potatoes and suluguni
Description
Goes perfectly with tea and coffee. Pie dough should be soft and airy, not heavy with flour. Always cool the filling; never put it on the dough while hot or the dough will turn tough. Ideally, the thickness of the round should be under one centimetre, and the baking time depends on how hot the oven is and how thick the pie is. The bake is ready. Serve at the table.

Prepare all the ingredients you need to make Ossetian pies with potato and sulguni.

Peel the potatoes, wash them, and boil in salted water until tender. Drain off all the cooking liquid, mash with a potato masher until smooth, add butter, stir, and cool completely.

Sift the flour into a deep bowl, add the salt, sugar, and dry yeast. Mix everything well.

Warm the milk until lukewarm, then pour it into the flour.

Knead a smooth, sticky dough. Cover the bowl with the dough and put it in a warm place for one hour to rise. Sprinkle flour on the table, place the risen dough on it, and knead until soft.

Into the cooled potatoes, grate the cheese, mix, and if needed season to taste with salt.

Divide the dough into two parts if the pan is 18 centimeters. With a 26-centimeter-diameter pan, you will get one pie. Roll the dough into balls and flatten them with your hands into flat rounds. Divide the filling into two parts, shape it into a ball, and place it on the dough.

Place the dough over the filling and pinch the edges together. Turn it seam side down and gently press it down a little with your hands. Dust the skillet with flour, transfer the pie, and gradually press the pie into a flat round out to the edges of the skillet. Make a few small holes without piercing through to the bottom, or make one hole in the center.

Place the skillet with the pie in an oven preheated to maximum heat and bake until golden brown.

Transfer the finished pie to a plate greased with butter. As soon as you take it out, brush the top of the pie with butter. Cut the finished pies and serve.
