
Ossetian pie with potatoes
Description
Perfect for tea and coffee. Delicious Kartojin – Ossetian potato pie. To prepare it, simply follow two easy steps: first, make a yeast dough using the required ingredients and let it rise well. While the dough is rising, prepare the filling – boil the potatoes, mash them into a puree, add the remaining ingredients and mix. Now, divide the dough into portions, roll each portion into a flatbread, and evenly distribute the filling onto each. Gather the edges of the dough around the filling like a pouch, pinch them together, and flatten into a patty shape. Make a small hole on top and bake the pie for 15 minutes. Serve immediately once ready.

First, prepare the dough. The kefir should be at room temperature; add yeast, vegetable oil, salt, and sugar to it, and mix well. Add 2 cups of flour and stir with a spoon to form the dough. Sift the remaining flour onto the countertop, place the dough on it, and knead thoroughly. Let it rise in a warm place for an hour and a half.

Boil the potatoes and mash them into a puree.

Add feta cheese, chopped ramsons, salt and pepper to taste. Mix well.

Divide the dough and filling into 3 parts. Flatten each piece of dough into a round shape, place a portion of the filling in the center, then gather the edges of the dough over the filling to form a pouch. Place the resulting dough ball with filling onto a pan and gently flatten it as thin as possible without tearing the dough. Make a small hole in the center of the pie to allow steam to escape. Preheat the oven to 200°C (392°F) and bake the pie for 15 minutes. Serve immediately while hot. However, it will still retain its excellent flavor even after a couple of days.
