
Ossetian bean pie
Description
The recipe won't take much time. A round, golden pie, radiating warmth, fullness, and coziness in the house—it's like a piece of sunshine on our table. To prepare it, knead a yeast dough using the required ingredients. Soak the beans in advance and boil until tender, then pass them through a meat grinder. Add the remaining filling ingredients and mix well. Divide both the dough and the filling into three parts. Roll out each piece of dough into a flat round, place the filling in the center, and seal the edges. Transfer the filled ball onto a baking sheet, flatten it gently with your hand, and bake in the oven for 15 minutes. While the pie is still hot, brush it with butter and serve. It can be enjoyed with tea or coffee.

Soak the beans overnight the day before preparing the pie. Then set them to boil. Dissolve the yeast and sugar in warm water. Sift the flour and add the yeast mixture, warm kefir, and salt. Knead the dough. Add vegetable oil, mix again, and let rise for 40 minutes. Then punch down the dough and let it rise for another 30 minutes.

Chop the onion and fry until golden brown.

Pass the cooked beans through a meat grinder, add onion, minced garlic, thyme, as well as salt and pepper to taste. Mix well and divide the filling into 3 parts.

Do the same with the prepared dough. Roll out each portion into a flat round, place a portion of the filling in the center, then gather the edges up around the filling and pinch them together at the top. Transfer the resulting ball into a round pan, seam side down, and flatten it with your palm into a thin round. Make a small hole in the center. Preheat the oven to 250 degrees and bake the pie for 15 minutes. While still hot, brush it with butter and serve.
