
Ossetian pie with greens and cheese
Description
The pastry is simple and quick to prepare. This very tasty and easy-to-make pie originates from the Caucasus Mountains. First, you need to prepare a yeast dough and let it rise well. For the filling, chop the greens and grate the cheese. Punch down the risen dough and divide it into three parts. Roll each part into a flat round, place a portion of the filling on top, then gather the edges up around the filling to form a pouch. Flatten the dough ball into a round, flat pie and bake in the oven for 15 minutes. Once done, generously brush the pie with butter and serve. The pastry is ready. Serve at the table.

Warm the kefir to 40 degrees, add yeast and a little flour, then let it sit for 10 minutes. Then pour this mixture into sifted flour, add salt and vegetable oil, and knead the dough. Let it rise in a warm place for an hour until well risen.

Wash the greens thoroughly and chop them.

Add the grated cheese and salt to taste, mix well.

Knead the ready dough and divide it into three parts. Roll each part into a flat round, place a portion of the filling on top, then gather the edges up around the filling to form a pouch. Next, flatten the resulting dough ball into a flat round cake and place it in the oven. Don't forget to make a small hole on top to let steam escape, and bake for 15 minutes at 220°C. Generously brush the finished pie with butter.
