Ossetian pie on a frying pan

120 min4 serv.21 февр. 2026 г.

Description

The pastry is simple and quick to prepare. Usually, pies aren't cooked on a skillet, but I dare to call this dish a pie, as it turns out just as delicious as oven-baked ones, yet much easier and faster to make. Put the dough ingredients into a bread machine, and while it's working, prepare the filling. Boil the potatoes, mash them into a puree, add grated cheese, and mix well. Divide the ready dough into portions, flatten each portion into a round patty, and place equal amounts of filling onto each patty. Gather the edges of the patty around the filling, forming a ball, then flatten it into a thin pie. Cook the pies on a dry preheated skillet, covered, until fully cooked. Then brush them with butter, stack them on top of each other, and serve hot. They can be served with tea or coffee.

I have an assistant—the bread machine. It will help me knead the dough. If you don't have such an appliance, you can knead it by hand, but this way is easier and faster. Pour kefir, water, oil, pieces of butter, flour, salt, sugar, and yeast into the bread machine.

Turn on the yeast dough preparation mode and wait for the program to finish. Then divide the dough into 3-5 equal parts.

Divide the dough into portions, flatten each portion into a round disc, and place an equal amount of filling onto each disc. Gather the edges of the disc around the filling, then flatten the resulting ball into a thin pancake. Heat a dry skillet and cook the pancakes under a lid over low heat until fully cooked. Then brush them with butter, stack them on top of each other, and serve hot.
