Description

Oromo is a steamed roll filled with lamb and regular potatoes. It is the potatoes and fat that make this dish very juicy and satisfying. Instead of lamb, you can use beef or veal. Serve hot with sour cream or a spicy vegetable sauce.

    Prepare all the necessary ingredients for making the "Oromo" roll. If your lamb is lean, you'll need to add lamb fat. My lamb ribs are quite fatty, so I simply cut the meat off with the fat, then weighed the required amounts of meat and fat separately.

    Wash the meat and fat, dry them, and cut into pieces. Pass them through a meat grinder with a fine grid. Mix until the fat is evenly distributed in the meat.

    Pour water into a bowl, add salt and half an egg, mix until uniform.

    Add the sifted flour and knead until you have a soft dough. Cover it with a clean cloth and let it rest for 15 minutes.

    Peel the potatoes, wash and cut into cubes. Pass through a meat grinder and add to the bowl with lamb mince. Mix thoroughly.

    Peel the onion, cut it into pieces, and pass it through a meat grinder as well. Add it to the bowl with the minced meat. Season with salt and pepper, and mix thoroughly. If the mixture is too dense, add a little water to make it softer.

    Melt the butter and spread it over the entire surface of the dough. Then distribute the filling evenly over the surface.
