
Nut Cookies
Description
Delicious baked treats for the whole family. Any nuts or a mixture of different nuts can be used for the pastries; I used walnuts. If you're using almonds, toast them in a dry skillet until they release their characteristic aroma. Then grind them into fine crumbs. Gently fold the nuts into the egg whites to prevent them from sinking—this will keep the nut filling light and airy. The original recipe called for more sugar, nearly 190 grams, but I reduced it to 160 grams; in my opinion, the pastries turned out sweet enough. You can add a flavoring to both the batter and the filling to enhance the nutty aroma, or a touch of vanilla extract—just a little, so as not to overpower the nut flavor. Good luck! 1. Prepare the ingredients. Let's get started!

2. Melt the butter, but do not boil it—I heated it in the microwave for about half a minute, just until the butter softened. Add two egg yolks and powdered sugar to the butter, and mix well with a spoon.

4. Do not overwork the dough with flour; it's enough that it comes together into a ball. Wrap it in plastic wrap and refrigerate. Turn on the oven to 200 degrees and let it preheat.
