
Nut pastries without flour
Description
Perfectly pairs with tea and coffee. For our son's first birthday, my husband baked a cake with a single candle. It so happened that we had no flour at home. And without flour—what kind of baking is that? However, we did have 100 grams of poppy seeds and a whole sack of walnuts sent to us by my husband's parents from Zakarpattia. My resourceful spouse applied some "engineering thinking" and decided to make a sponge cake using poppy seeds and walnuts. He succeeded brilliantly. Since then, this has become our most cherished family recipe for dough, which works wonderfully for both pastries and cakes. The baked goods are ready. Serve at the table.

Place the nuts and poppy seeds in the blender bowl and blend until smooth into a paste.

Mix everything until smooth.

Separate the egg whites from the yolks. Beat the yolks with sugar until creamy. Then add the egg whites. Add softened butter and beat until smooth.

Mix the poppy-nut paste with the egg and beat for another few minutes.

Since the dough for buns turns out to be liquid, I used cupcake molds. Grease them with butter and fill with the dough. Meanwhile, prepare the syrup: dissolve 50 g of sugar in water, bring to a boil, and add the liqueur.

Bake the buns in the oven for 15 minutes at 160 degrees. After 10-15 minutes, when the buns start to "open up," open the oven and pour syrup over them, literally one teaspoon per bun. Then bake for another 10 minutes.
