Description

As far as I know (and Wikipedia agrees with me), kozinaki are a traditional Georgian dessert. You probably already know what they are—roasted nuts caramelized in honey and sugar. Usually, in Georgia, walnut kozinaki are made on the eve of Christmas and New Year. Making nut kozinaki at home is easy—I'll show you how.

    Toast the shelled walnuts in a dry skillet over low heat for 2–3 minutes.

    Remove from heat, let cool. Peel the roasted walnuts from their skins with your fingers. Chop (not too finely).

    Place the honey in a large flat skillet. Set over low heat and heat for 8–10 minutes, stirring. The honey should become liquid.

    Reduce the heat to the lowest, add sugar and heat for another 2-3 minutes.

    Carefully add the nuts to the frying pan.

    Evenly distribute the nuts over the surface of the pan and cook for another 2-3 minutes over the lowest heat.

    We turn off the heat. Place a small amount of nuts on a wet wooden cutting board.

    Level it out using a rolling pin.

    With wet hands, shape into a rectangle.
