
Nut cookies
Description
A slice of shortbread and a cup of good tea will brighten your mood on a cloudy day. It makes a great snack or a breakfast dessert. Serve the shortbreads with jam (such as peach), topped with walnuts. Serve cooled or slightly warm.

1. Lightly toast walnuts in a skillet. Preheat the oven to 160 degrees. Place the walnuts in a food processor and grind.

2. Transfer to a bowl and mix with flour and salt. In another medium bowl, using a mixer on medium speed, beat the butter, sugar, and vanilla extract until creamy.

3. Gradually add the nut-flour mixture and beat until smooth.

4. Grease a 20 cm pie pan with butter. Place the dough into the pan.

5. Cover the dough with plastic wrap and press it evenly against the surface of the pan (the wrap will prevent the dough from sticking to your fingers).

6. Cut the dough into 8 slices with a knife. Prick the dough pieces with a wooden skewer or fork. Bake until golden brown, for 30 to 35 minutes.

7. Let cool in the pan on a wire rack. Dust with powdered sugar and serve.
