
Nut cookies with chocolate
Description
Delicious baked goods for the whole family. Light, airy nut meringue. In taste they are similar to almond cookies. A layer of dark chocolate pairs well with the sweet flavor of the cookie itself.

1. Break the chilled eggs and separate the whites from the yolks. Mix the egg whites with sugar and beat until a uniform white thick mass forms. Grind the nuts. Add the nuts and vanilla sugar to the white mixture. Stir gently.

2. The protein‑nut mixture will become thick and sticky. Line a sheet or baking tray with parchment paper. It is best to use a pastry bag and pipe small discs onto the sheet. If you don’t have a pastry bag, you can drop the discs with a regular dessert spoon. To make the cookies beautiful and small, pipe small discs. The smaller you pipe the discs, the more airy and crisp your cookies will turn out.

3. The oven should not be hot. Preheat it to 130 °C. The cookies are not so much baked as they are dried out. Keep them in the oven for about 40 minutes. When you take the cookies out of the oven, let them cool, and only then remove them from the sheet. Melt a bar of dark chocolate in a water bath. Spread chocolate on one cookie and place the second on top. Gently press the cookies together and let the chocolate set.
