
Honey mushrooms marinated in jars
Description
A preservation recipe without unnecessary fuss. Many people underestimate honey fungus and prefer more “noble” mushrooms, but I personally adore them, and as soon as the season starts I jar honey fungus like crazy, because in winter those little mushrooms disappear in no time. I use an old, tried-and-true recipe and am happy to share it with you and explain how to make honey fungus marinated in jars. Here I’ve picked what I think is the perfect spice blend, but of course you can add or remove something—it’s all a matter of taste. Otherwise, the mushrooms turn out simply superb: very firm, with an amazing aroma. So let’s head to the forest or the market for our harvest and preserve honey fungus marinated in jars at home, so we can enjoy their excellent flavor in winter. The jars keep for up to a year in a cool place.

First of all, of course, we need to carefully sort through the honey mushrooms and give them a thorough wash.

Now put the mushrooms in a pot, add about 1–2 cups of water, and simmer the honey fungus for quite a long time, about 1–1.5 hours.

Then drain the mushrooms in a colander and rinse them thoroughly several times. Leave them to drain while we prepare the marinade. Pour 2 liters of water into a pot, add the garlic and all the spices, put the marinade on the heat, and bring the liquid to a boil. Add the mushrooms to the boiling marinade and cook them for 10 minutes, then turn off the heat and add vinegar essence to the pot.

Place the honey mushrooms in sterilized jars, pour the marinade over them, and seal the jars.

Turn the jars upside down, cover them with something warm, and leave them in this position until completely cooled, then move the jars to a cool, dark place for storage.
