Prepare all ingredients.

Soak the shiitake mushrooms in hot water for 15-20 minutes. Then drain the water, rinse the mushrooms, and squeeze out excess moisture.

Rinse the rice until the water runs clear. Cover with clean water, bring to a boil, and stir. Reduce the heat to low and cook, covered, for 15 minutes. Then cover the pot with a clean towel and place the lid on top; let it sit for another 15 minutes. Separately, dissolve the sugar, salt, and rice vinegar in 1 tbsp water. When the rice has cooled slightly, pour in this seasoning and mix.

Cut the shiitake and mushrooms into small cubes. Add soy sauce, black ground pepper, oyster sauce, and pan-fry until golden.

Finely chop the green onion and mix it with the mushroom filling.

Wet your hands and the onigiri mold with water. Fill the mold halfway, making an indentation for the filling. Place the mushroom filling in the center.
