Microwave Omelet Muffins

Description

Works for both holidays and everyday meals. Microwave egg muffins are easy and quick to make. One winter a friend made muffins for breakfast and I got three. Back then I didn’t know that fancy word—I just thought of it as a single-serving omelet. The best thing about microwave muffins is that you can put a different filling in each mold. That’s very handy, because every family member has their own tastes, and colored molds make it easy to tell whose muffin is whose. So here we go: the appetizer is ready. Serve right away.

   Whisk eggs with milk, add grated cheese, spices, and salt.
