1. The recipe for omelet in a clay pot is good because it is very simple. You can add any vegetables or smoked meats and make it differently each time. Crack 2 eggs into a bowl (per 1 serving) and salt lightly.

2. Beat with a mixer (or blender) until increased in volume. Add a little milk and beat thoroughly again. Milk can be replaced with mayonnaise or sour cream.

3. Grease the small pot with butter or vegetable oil. You can use a piece of lard.

4. Pour the eggs into the pot. If you are adding vegetables or smoked meats, place them on the bottom. You can sprinkle a little grated cheese on top. The omelet will rise, so do not fill it to the brim.

5. Wash and dry the green onions. Cut into small pieces and sprinkle over the omelet. Place the pot in a well-preheated oven for 10–12 minutes. Once the omelet in the pot is ready, let it rest for a few minutes so it loosens from the sides of the pot. Serve with vegetables or meat, or on its own for breakfast.
