
Oven Omelet with Sausage
Description
This recipe won't take much time. It's a classic oven omelet with sausage—half an hour is enough to make breakfast for the whole family. When I made it, I used dry-cured sausage, which gives the omelet a more contrasting flavor; it's best to cut the sausage into small pieces so it stays just a complement to the main dish. Beat 5 eggs in a bowl.

Pour in 1 cup of milk. Add salt and pepper to taste. Mix with a whisk, but do not whip.

Cut the sausage into pieces.

Grease the baking dish with butter. Place the sausage on the bottom and pour in a little more than half of the egg-milk mixture, as the omelet will rise during baking.

Bake in an oven preheated to 200°C for 20–30 minutes. Do not open the oven for the first 15 minutes of baking. Serve the omelet sprinkled with fresh herbs.
