3. Heat a little butter in a skillet. You can certainly use vegetable oil instead, but butter works better with caviar. Carefully pour the prepared egg mixture into the skillet and cover with a lid. Cook over medium heat.

4. When the top of the omelette has set slightly, flip it with a spatula and fry on the other side for a couple more minutes.

5. Meanwhile, you can prepare the caviar. When the omelet is ready, transfer it to a plate and garnish the top with 1–2 tablespoons of caviar (you can add more, of course).
