
Eggplant Omelette
Description
The dish is prepared without unnecessary complications. I cook eggplant omelet for myself, especially when I want a healthy and light lunch. If I make it the main lunch dish, I serve it with a side, for example, rice. It's also nice to cut the eggplant omelet into small pieces and mix it with rice, then drizzle with soy sauce. This creates an oriental-style dish. Experiment! The finished dish can now be served.

Preheat the oven to 200 degrees. Place the eggplants, with their skin on, into a baking dish and bake for 30 minutes.

The baked eggplants should be cooled slightly.

Peel the eggplants once they have cooled slightly.

Slightly mash the baked eggplants with a fork.

Beat the eggs. Salt and pepper to taste.

First, dip the eggplants one by one into the egg mixture. Place them on the frying pan, then pour the remaining egg mixture over them. Fry the eggplant omelet on both sides until fully cooked.
