This appetizer is quick and easy to make. Preparing a Milanese omelette at home is very simple. The ingredients are easy to find and inexpensive—well, capers might be the only exception, but you can skip them if you like. You can replace them with olives. So, here’s how to make a Milanese omelette: 1. Peel the onion and slice it into half-rings. 2. Sauté the onion in butter until partially cooked. 3. Grate the cheese on a coarse grater and mix it with the onion and capers. 4. Beat the eggs with milk, salt, and pepper. 5. Cook the omelette in a heated frying pan with olive oil. Gently stir the omelette without scraping the bottom. This helps it cook evenly. 6. When the omelette is almost done and only the center is still slightly runny, spread the onion and caper mixture on one half of the omelette. Fold the omelette in half, turn off the heat, and serve breakfast :) Buon apetitto, as they would say in Milan. The appetizer is ready. Serve immediately.
