
Lorraine-Style Omelet

Heat a skillet with butter over high heat.

Mix the eggs with salt and pepper. Do not whisk—the omelet should not be fluffy.

Pour the eggs into the pan and, holding the pan over the heat, gently shake it back and forth. This keeps the omelet from sticking to the bottom of the pan. At the same time, stir the omelet without piercing it all the way through. Do all of this quickly, for about 15–20 seconds.

Place grated cheese and sliced bacon or ham in a strip down the center of the still slightly runny omelet.

Using a spatula, fold the omelet into an envelope shape. Do this quickly while the omelet is still soft. That way it won’t break and will stay soft inside.

Remove the rolled omelet from the pan and serve.
