Andalusian Omelet

Description

A delicious appetizer for any gathering. Spanish cuisine is renowned for the simplicity of its dishes, which always turn out exceptionally tasty. Andalusian-style omelette will help you add variety to your usual breakfast. Capers and garlic will give the dish authentic Spanish piquancy, while tomatoes and sweet pepper will add the necessary vitamins and nutrients.     Slice the onion into half-moons, cut the red pepper into small strips, and mince the garlic. Beat the eggs separately in a small bowl and season with spices to taste.

    Heat the olive oil in a pot and add the onion. Salt lightly. Cook the onion until golden over very low heat for about 30 minutes, stirring frequently.

    Pour the red pepper and garlic into the pot. Cook until the ingredients are soft.

    Add the tomatoes and capers and cook for just 30 seconds, then remove from the heat and transfer everything to a large bowl. Pour the beaten eggs into the same bowl and mix everything well.

    Pour one quarter of the mixture onto a preheated small skillet, spread it evenly across the pan, and cook the omelet for about 2–3 minutes until the bottom is golden brown.

    Take a flat plate that fits the size of the omelet and place it in the skillet. Carefully, using oven mitts, flip the skillet so the omelet stays on the plate. Lightly grease the skillet with olive oil and return the omelet to it for another 2-3 minutes to cook on the other side.

    Remove the omelet from the pan using a plate and repeat the steps three more times to end up with four omelet "patties".
