
Spinach Pancakes
Description
Tasty baked goods for the whole family. Instead of ryazhenka you can use kefir or snow, any full‑fat fermented dairy product. You can increase the amount of spinach; the color will only improve. If you don’t have pancake flour, substitute wheat flour and add 1 tsp baking soda and ½ tsp salt.

Prepare the necessary ingredients. Rinse the spinach well. Remove the stems; we only need the leaves. Slightly warm the ryazhenka.

Place the spinach leaves in a blender, add half the amount of ryazhenka.

Pulse in pulse mode until a uniform consistency.

Mix the remaining ryazhenka with eggs and sugar.

Add the flour, spinach mixture.

Stir and let stand for 10 minutes at room temperature.

After the time has elapsed, heat the vegetable oil. Set the heat slightly below medium. Fry the pancakes on both sides until golden brown.
