
Pancakes with apple and raisins
Description
This recipe won’t take much time. Serve fluffy, delicious pancakes with sour cream, jam, jelly, or sweet syrup. You can pack them for work, a trip, or school. Remember that baking soda reacts with kefir, so you don’t need to neutralize it with vinegar or lemon juice. They go well with tea or coffee.

Prepare the listed ingredients.

Crack the chicken eggs into a deep bowl, pour in kefir of any fat content, add salt and granulated sugar. Whisk thoroughly.

Cut the apple and remove the core. Rinse and grate on a fine grater. Add to the whipped mixture together with the raisins. If the apple is small, use two fruits. Stir to combine.

Add the flour and baking soda and stir gently. The dough should turn out very thick but not dense.

Heat a frying pan with vegetable oil and drop 1 tablespoon of batter into the oil for each pancake. Immediately reduce the heat to medium and fry the pancakes for about 1 minute. Then flip them over and fry for 2 minutes.
