Cherry pancakes on kefir
Description
Delicious baked treat for the whole family. If the cherries are well drained, the batter won't have time to take on a bluish tint. I worked quickly, and my pancakes turned out golden with juicy, flavorful berries inside. Do try this delicacy yourself—serve it with tea or coffee.
Instructions

Step 1

Prepare the ingredients. Wash the cherries, remove the stems, and pit them. Place the cherries on a strainer and let the excess juice drain off.
- 2
Step 2

Mix kefir with sugar, egg, and baking powder using a whisk.

Step 3

Add flour, a pinch of salt, and a pinch of vanilla. Whisk the batter until smooth. The batter should have the consistency of regular pancake batter: moderately thick. Mix in one tablespoon of vegetable oil.

Step 4

Add pitted cherries!
- 5
Step 5

Stir gently to avoid damaging the cherries. The batter is ready for frying!

Heat a skillet with oil. Use a tablespoon to scoop up the batter with cherries, place it into the oil, and fry over low heat until a beautiful golden crust forms. Flip the pancakes with a spatula and cook until done.
