
Pancakes with dried fruits
Description
Pancakes are quick to prepare, much faster than crepes. That's what makes them so convenient. By the time you're done making crepes, a lot of time has passed. But pancakes—just a minute or two—and they're ready! And they're just as delicious. True, they do contain more fat. But if you use a non-stick pan, you can even cook them without oil. Serve them warm or chilled. Perfect with tea.

Soak the apricots, prunes, and raisins in boiling water. Rinse them thoroughly to remove dirt and residue. Chop the apricots, prunes, and any other ingredients you'd like to use as a filling for the pancakes into small pieces.

Make the dough. Beat the eggs with sour milk, kefir, or buttermilk. Sift the flour with baking soda. Rub the flour into the kefir. Add vanilla, sugar, and a pinch of salt. Knead a rather soft, but not runny dough. Add the dried fruits and mix everything together until uniform.

Heat a frying pan. Add vegetable oil. Spoon the batter onto the hot pan in portions. Fry over medium heat on both sides until golden brown.

No more than half an hour has passed, and the little pancakes are already fried. We made them not plain, but with filling. Dried apricots, prunes, and raisins look wonderfully in the batter. In taste, they resemble sweet buns—only lazy ones. Serve them with hot tea or coffee. Enjoy your cozy gathering!
