Kefir Pancakes with Filling

Description

The recipe won't take much time. The pancakes will be perfect for breakfast, a snack or a bite. Children who don't like cottage cheese on its own will eat them with pleasure. They won't even realize that it was used as a filling! Remember that you shouldn't add too much baking soda and salt, otherwise the baked goods will turn out tasteless. They can be served with tea or coffee.

    Prepare the listed ingredients.

    Pour kefir of any fat content into a container, crack in a chicken egg and add granulated sugar, salt. Beat everything together. Add flour and baking soda, knead a thick batter for pancakes. Do not add too much baking soda, as the baked goods will become bitter in taste.

    Heat a skillet with vegetable oil and, using a tablespoon, drop portions of batter into the oil. Reduce the heat to low. Place about ½ tsp of cottage cheese of any fat content in the center of each pancake. You can substitute the cottage cheese with grated bryndza or feta.

    Pour a little batter over the filling from above, so that it covers it. Fry the pancakes for about a minute on one side.

    Flip to the other side, fry for the same amount of time, and place the pancakes on a plate lined with a paper towel.

    Serve the baked goods warm with aromatic tea or coffee, and don’t forget honey, jam, or jelly as an accompaniment.
