
Carrot Pancakes with Kefir
Description
Delicious baked goods for the whole family. Carrot pancakes are a wonderful alternative to the usual ordinary pancakes. Moreover, carrot pancakes turn out to be healthier, because they contain carrot, which is so good for children. So if you want to feed the little picky eaters with carrots, make these pancakes; they will like them, and most likely they won’t realize what’s inside. Serve them cooled or slightly warm.

Prepare all the necessary ingredients. You can use kefir of any fat content; mine is 1%.

Pour the kefir into a deep bowl, add the baking soda and stir. Let it sit for a couple of minutes. Then add the eggs and sugar, and whisk well.

By the way, you can omit the sugar entirely if you want to make the pancakes healthier.

Grate the carrot on a fine grater and add it to the pancake batter. Mix.

Now gradually add the flour while stirring. 2 cups is an approximate amount of flour; you may need more or less depending on the consistency of the kefir, the size of the eggs, and the juiciness of the carrots. But the batter should become fairly thick, almost like cake batter. Then the pancakes will rise well and turn out very fluffy.

The dough is ready.

Heat vegetable oil in a pan. Spoon the batter onto the pan. It is thick enough that it doesn’t spread across the pan. When the batter sets, flip the pancakes to the other side, and you’ll be surprised at how they start to rise!
