
Zucchini pancakes with kefir

First, prepare the zucchini. Grate it and place in a saucepan, add salt, and let the zucchini release its juice. Drain this liquid. Let the zucchini sit for about 10 minutes, pouring off the accumulated juice from time to time.

While the zucchini are marinating, chop the parsley and press the garlic using a garlic press. Drain the juice from the zucchini one last time, then add the herbs and garlic, and season with pepper to taste.

In a separate saucepan, pour the kefir, add eggs, sugar, and 0.5 tsp of salt, then beat the mixture (preferably with a mixer). Gradually add flour; the mixture will become very thick. Don't worry, it will become more liquid when combined with the zucchini.
