
Yeast Pancakes with Raisins
Description
The recipe won’t take much time. What could be better for breakfast than fluffy, golden-brown, hot pancakes, just like in childhood, when our caring grandmothers and mothers were “working magic” at the stove. And although this dish is not known for being low in calories, for those who work or study, it is a great way to stay full until lunch. Well, to somehow diversify and refresh the taste of this well-known and popular dish, I suggest adding raisins to the batter. This will give the finished dish a new flavor note. Serve warm or chilled. Perfect with tea.

Prepare the ingredients for making pancakes.

Prepare the dough starter. Crumble the fresh yeast into a bowl, add warm milk and a tablespoon of sugar, then stir.

Pour 150 grams of flour into a bowl.

Mix the milk, yeast, sugar, and flour. The starter is ready. Place it in a warm place for 30–40 minutes until it doubles in size.

This is how the sponge should look after 40 minutes.

Add the egg, salt, and 2 more tablespoons of sugar to it.

Mix and pour in 2 tablespoons of refined sunflower oil.

Add the remaining 50 grams of flour.

Rinse the raisins beforehand, pour hot water over them, and after 5–6 minutes drain the water. Add the raisins to the bowl with the dough and stir. Put the dough back in a warm place for 20 minutes. During this time, it will rise a little more.

Spoon the batter onto a hot skillet with sunflower oil.
