
Pancakes with minced meat
Description
Homemade treats for tea. To make pancakes, prepare the batter and season the filling. Let the batter rest and rise slightly. Heat a skillet, start frying the pancakes, place the filling on them, then cover with more batter. When the batter becomes firm, flip them over. Serve warm or chilled. Perfect with tea.

Crack an egg into a bowl, add a pinch of salt. Stir the egg with a fork; no need to beat it.

Pour in the kefir and add the baking soda (no need to pre-neutralize it, it will dissolve perfectly in the kefir), mix and let it sit for about 10–15 minutes to allow the baking soda to fully react.

Now let's prepare the filling. Season it with salt and pepper, add finely chopped onion, and mix well.

After the time has elapsed, a thick foam should appear on the surface of the kefir. Add the flour (previously sifted through a sieve) and mix thoroughly to avoid lumps; the dough consistency should resemble that of medium-fat sour cream.

Heat a frying pan with sunflower oil well, then spoon the batter into the pan to form small pancakes, placing a teaspoon of filling on top of each one.

On top, add the dough again. Fry covered over low heat, making sure the filling inside the pancakes is thoroughly cooked. Serve with sour cream or any sauce. These pancakes are delicious both hot, straight from the pan, and cooled down.
