Grate the eggplant and garlic on a fine grater or pulse them in a food processor. Add the Adyghe cheese and pulse again.

Beat the egg into the kefir, add salt and sugar. Stir in the sifted flour with baking soda and knead the dough with a whisk. If the kefir is fresh and not too sour, you can add a little lemon juice.

Add the eggplant‑cheese‑garlic mixture to the dough and stir. Pour in the olive oil and stir again. Let the dough rest for about 10 minutes.

Next you can fry the pancakes in a skillet as usual. But in the summer heat I recommend baking them in a waffle iron for Viennese waffles. It will be tasty, quick, and your home won’t smell of fried oil or turn into a hot desert. So preheat the waffle iron and spoon about a tablespoon of batter onto each plate.
