
Ryazhenka Pancakes
Description
In essence, pancakes made with ryazhenka are cooked the same way as with milk or kefir, but the proportions of the other ingredients are a little different—ryazhenka is not as thick as milk or kefir. Both my children and my husband like ryazhenka pancakes more than any others: they are fluffier, with a faint tangy note of ryazhenka. I usually serve them with sour cream or jam. Good luck with the preparation. The baking is done. Serve at the table.

The ingredients for making pancakes are standard.

Sift all dry ingredients into a bowl—flour, salt, baking soda, sugar, and granulated sugar.

In another bowl, whisk the ryazhenka with the eggs.

Continuing to whisk, add the dry ingredients to the liquid mixture. Small air bubbles should form on the surface of the batter.

Add a little vegetable oil to our batter—and fry the pancakes the classic way in a pan. On both sides until done.

These turn out to be such beautiful, golden pancakes.
