Description

The recipe won't take much time. Fluffy and tender pancakes, served hot off the pan, are especially similar to soft buns. Many believe this can only be achieved with yeast, but that's not true! The fluffiness comes from the reaction between baking soda and sour milk. Try making them this way—you'll definitely like it. The specified amount of ingredients yields quite a large batch, enough for a hearty breakfast for the whole family. The baked goods are ready. Serve at the table.

    Beat the eggs with sugar and salt.

    Add the baking soda and mix. Small bubbles should form on the surface.

    The batter should have the consistency of thick sour cream. If there is too little flour, the pancakes won't rise; if there's too much, they won't cook through—this point is very important! You don't need to achieve a perfectly smooth mixture; small lumps of flour are acceptable. The batter for fluffy pancakes made with soured milk does not tolerate excessive mixing. Let the prepared batter rest, covered with a lid, in a warm place for 20 minutes. If you don't have a warm spot in your home, place the bowl with batter into a larger container filled with warm water (not boiling water!).
