
Kvass Pancakes
Description
Baking is prepared simply and quickly. The recipe for making kefir pancakes is simple and accessible. But to truly delight with their taste, note a few points. Do not increase the amount of sugar; the pancakes will burn and bake poorly. Do not stir the dough after it has risen; scoop it with a spoon and essentially “cut” it against the edge of the bowl. This will preserve the fluffiness of the pancakes after baking. Do not raise the temperature while frying; this can also adversely affect the cooking. Serve warm or cooled. Perfect with tea.

Prepare the necessary ingredients.

Heat the kvass to a temperature of 36–38 °C. Pour it into a bowl. Add salt, sugar, yeast. Mix with a whisk.

Add the eggs. Stir.

Add 380 grams of flour.

Whisk it with a whisk. If the batter is thin, add a little more flour. The finished batter should be thick and hard to slip off the spoon.

Cover the prepared dough with a towel and place it in a warm spot for 40–60 minutes.

After the waiting time, the batter will have noticeably risen and be ready for making pancakes. Do not stir it before cooking.

Pour a couple of tablespoons of vegetable oil into a skillet, heat it, and spoon about 1.5 tbsp of batter for each pancake. It is important to note that when scooping the batter into the spoon, you should kind of trim it at the edge of the bowl. Fry on both sides until golden brown. Each side takes about 3 minutes on average.

Transfer the finished pancakes onto a plate and serve with any toppings: sour cream, honey, or jam.
