Pancakes made with sour milk

Description

The recipe won't take much time. I bought milk at the store with a normal shelf life, but when I opened the bottle, I realized the milk had soured and was actually almost kefir—sour milk. It had fermented well. I didn't go back to the store. No time. I decided to use this soured milk for pancakes.

    Pour the sour milk into a bowl. There's no need to beat it separately. Sometimes the milk may be lumpy, but it will easily become smooth when mixing the dough. Add sugar and baking powder (or ½ teaspoon of unreacted baking soda) to the sour milk. Let it sit. The sour milk will activate the baking soda, and you can continue cooking. Wait about 10 minutes. Add salt and 1–2 eggs to the dough.

    Sift the flour and knead the dough. The dough will be quite thick, but closer in consistency to thick sour cream.

    Add vanilla or another flavoring to the batter. You can make the pancakes with raisins or dried cherries by adding them to the raw batter. Now, fry the pancakes using the prepared mixture. Pour vegetable oil into a frying pan and heat it up. Place the batter with a tablespoon. Flip each pancake to the other side and brown it. Keep an eye on the oil level—it should be sufficient for the pancakes to turn out nicely.

    Serve the pancakes with sour cream mixed with sugar.
