
Kefir pancakes as light as fluff
Description

The batter is mixed with kefir and water, heated over low heat, and later soda, flour, and eggs are added. The pancakes really turn out airy and melt-in-your-mouth. They can be served with tea or coffee.

Prepare the necessary ingredients.

Mix the kefir and water, heat over low heat until the liquid becomes warm. Immediately remove from the heat so the kefir does not boil and curdle.

Add the baking soda to the kefir mixture, stir with a whisk. The soda will react and fizz a little.

Add salt and sugar.

Crack in a chicken egg and whisk the dough again with a whisk until smooth.

Add the flour in batches and gradually knead a dough that isn’t too thick. It will be moderately liquid. You can test its readiness with a spoon. The dough will slowly slide off the spoon. Let the dough rest for 10–15 minutes. The pancakes will then turn out truly like fluff.

Heat the oil in a pan, setting the heat to slightly below medium. Spoon the pancakes onto the pan. Fry until a golden crust appears.
