
Yeast and kefir pancakes
Description
The recipe won't take much time. The pancakes are very easy to make: just prepare a liquid batter from the listed ingredients and let it rise. Then fry them in a pan. You can make the pancakes salty, sweet, or plain. I like adding dill to the batter—it looks beautiful and tastes delicious. Good luck! Serve cooled or slightly warm.

Prepare the ingredients.

Warm the kefir to 38-40 degrees, no higher: otherwise curd will form. Add salt, sugar, and live yeast. Dissolve everything.

Add butter, flour, and a few drops of aromatic essence or a pinch of vanillin to the dough. Knead until you get a soft, pliable dough, then let it rise in a warm place for 1 hour. Be sure to cover it with a dry cloth.

When the dough has over-fermented, you will notice that it starts to "settle down," which means it's time to start frying.

Fry in vegetable oil on both sides until a nice crust forms.
