
Breakfast pancakes with catfish roe
Description
The baked goods are quick and easy to make. Catfish roe fritters are delicious served hot or cold with various sauces, sour cream, garlic pâté, or spread. Don’t forget to add baking powder or baking soda slaked with vinegar to the batter so the baked goods turn out fluffy and light. You can serve them with tea or coffee.

Prepare the ingredients listed. The roe may be any color, depending on the catfish species. Don’t worry—it will turn orange when fried.

Rinse the roe thoroughly in water and remove the membrane that holds it together. Transfer it to a deep container. Crack in a chicken egg and add salt. If you like, you can add a pinch of black pepper. Beat everything with a fork, stirring gently so that the membranes from the roe wind onto the fork. Remove them.

Pour in cold water and beat again. Add wheat flour and baking powder and mix the entire mixture. Be sure to add water or another liquid—kefir or milk—because the flour cannot distribute evenly in the egg white or in the roe.

Heat vegetable oil in a frying pan and drop in spoonfuls of the whipped roe mixture. Fry the fritters over moderate heat for about 2 minutes on each side.
