Green Pea Fritters

Description

For fritters, frozen or fresh peas will do, but they must be young and sweet, of marrowfat varieties. If, after thawing, the peas turn out to be slightly bitter, boil them for a couple of minutes in lightly salted water. The baked goods are ready. Serve to the table.

    Prepare all the ingredients for making fritters. Defrost the peas in advance and drain the water.

    Transfer the peas to a mixing bowl and blend them with an immersion blender. Do not blend to a pureed consistency; leave some chunks and a few whole peas.

    Add rich thick sour cream, a large egg, baking powder, salt, and pepper to taste.

    Stir the pea mixture with a spoon.

    Gradually add flour, knead the dough; it should turn out fairly thick, but not stiff. Let the dough rest for about 10 minutes before baking.

    Now scoop up the batter with a tablespoon, place it into a small amount of heated vegetable oil in a frying pan, and fry over medium heat for 2–3 minutes on each side.
