Description

Homemade treats for tea. I love dishes like fluffy pancakes, fritters, cottage cheese pancakes, and lazy vareniki. To me, all of these are associated with something warm and cozy. Probably, these are the most common baked treats prepared in every household. Cottage cheese pancakes are something in between fluffy pancakes and cottage cheese pancakes, so you can please everyone at once. Serve cooled down or slightly warm.

    Place the cottage cheese in a bowl. Rub it together with the egg, sugar, and salt. It is best to use dry, crumbly cottage cheese. If the cottage cheese is wet, it will release water, and you may need to add more flour.

    Sift the flour with baking soda. Gradually add the flour to the cottage cheese, mashing everything with a fork. After adding 1 cup of flour, pour in 200 grams of kefir, then add another cup of flour and the same amount of kefir.

    After thoroughly beating the batter with a mixer, heat the pan. Pour in vegetable oil so that the pancakes are almost floating in it. Otherwise, they will turn out dry. But they will be less unhealthy. Fry the pancakes over medium heat on both sides.

    It is advisable to place the fried pancakes on a paper towel first to drain excess oil. Pancakes with cottage cheese turn out tastier than regular ones. Serve them with tea, jam, and milk!
