
Cottage cheese pancakes
Description
The baking is simple and quick. For making cottage cheese pancakes, I usually use homemade cottage cheese—crumbly and not too fatty. You'll need just a little flour, but we'll also add baking soda to make the pancakes fluffy. The main difference from regular pancakes is the delicate cottage cheese flavor. See the recipe below.

Add sugar, salt, and vanilla to the cottage cheese.

Mix the cottage cheese with sugar, salt, and vanilla. Taste the cottage cheese and, if desired, add more sugar or vanilla.

Add wheat flour, eggs, and baking soda to the cottage cheese. You can neutralize the baking soda with vinegar or lemon juice.

Mix everything well and don't worry if the batter looks too runny: the eggs will prevent the pancakes from spreading, and the small amount of flour will ensure their tenderness.

Use a tablespoon to scoop the dough, dipping the spoon into flour—this will prevent the dough from sticking to the spoon.

Take the required amount of dough with a tablespoon and place it into a plate with flour.
