I must admit that Jerusalem artichoke (also known as earth apple) is considered somewhat exotic in our family. Simply put, we almost never cook it. And that's a shame, because this mysterious tuber is actually a treasure trove of beneficial nutrients. In terms of taste, Jerusalem artichoke resembles potatoes, but is slightly sweeter. If you decide to try cooking with this vegetable, I highly recommend making Jerusalem artichoke pancakes—they turn out very tender, juicy, and with a subtle sweet flavor. Personally, they remind me a lot of regular potato pancakes. Do give them a try—I really hope you'll enjoy this Jerusalem artichoke pancake recipe! ;) They can be served with tea or coffee.

    Peel the Jerusalem artichoke like potatoes and grate finely (you can use a food processor).
