
Chickpea flour pancakes
Description
The recipe won't take much time. Chickpea fritters are fried in deep oil, then can be served as a meat patty substitute in hamburgers, or simply with bread and fresh herbs, drizzled with lemon juice. You can also prepare them in bar shapes, adding fresh herbs. Panelle must be served hot. Serve cooled or slightly warm.

1. Pour cold water into a large pot, add sifted chickpea flour, and whisk thoroughly until no lumps remain.

2. When everything is well mixed, add salt, place the pot over medium heat, and cook for about 15 minutes, stirring, until the mixture thickens.

3. Place the chickpea mixture into a container, cover with a lid, and refrigerate overnight. The mixture keeps well in the refrigerator for up to 2 days.

4. Remove the chickpea dough from the mold and blot with a paper towel to remove excess moisture.

5. Cut the dough into 5 mm thick slices.

6. Fry the chickpea pancakes on both sides in hot vegetable oil until golden brown.

7. Place the pancakes on a tray with a paper towel to remove excess oil.

8. Make yourself a great sandwich with panelle, drizzling them with lemon juice and sprinkling with freshly ground black pepper.
